What the Name Means

"I'll leave it up to you"

Omakase (お任せ) is the Japanese phrase for “I’ll leave it up to you”. It comes from the Japanese word makaseru (任せる) “to entrust”. It’s commonly used in Japanese sushi restaurants where ordering Omakase means you’re allowing the chef to decide what you’ll be eating – based on the ingredients that are most fresh and available.

You pay a bit less for higher quality dishes by sacrificing your right to choose. You’re entrusting your meal to the chef, the expert.
